The restaurant featured on this esteemed list, Papa's, redefines fine dining, establishing itself as an innovative venue worthy of this recognition.

This exclusive dining establishment accommodates only 12 guests at a time and is led by executive chef Hussain Shahzad. It presents a luxurious 13-course tasting menu that creatively blends traditional Indian cuisine with international influences. Situated in Bandra, TIME highlights that it has quickly become "one of the hottest tables in India" within just a year of its inception.

The name Papa's pays tribute to the late renowned Indian-American chef Floyd Cardoz, who served as a mentor to the executive chef. Fondly referred to as 'Papa,' the restaurant was named in his memory.

The unique arrangement of 12 seats surrounding the chef’s counter effectively closes the traditional divide between the chef and the diner, resulting in an extraordinary experience. As for the location, the establishment is perched atop Veronica's sandwich shop in Bandra West, transforming an attic into a fine dining experience that redefines the boundaries of culinary innovation.
