Method

Begin by heating oil in a pan. Once hot, add the ginger garlic paste. Next, incorporate the sliced onions and slit chillies, sautéing until the onions become pink. Carefully crack the eggs and place them on top of the sautéed onions. Cover the pan with a lid and allow the eggs to cook. Meanwhile, prepare the ellipaya karam by combining garlic, chilli powder, and salt, then grind them into a paste to be placed atop the cooked eggs. Serve the dish hot, garnished with fresh coriander, and accompany it with roti.
