Starter: Labneh cheese with roasted tomatoes and broccoli

This dish contains 313 calories, 24 grams of protein, and 5 grams of fibre. Dominique emphasizes that the blend of protein and prebiotics found in labneh, a fermented cheese from the Middle East, renders it an exceptionally nutritious appetizer. Each serving provides 14 grams of protein, which contributes to prolonged satiety and aids in regulating blood sugar levels, as noted by Dominique.

“Tomatoes support cardiovascular health due to their rich content of antioxidants known as lycopene. Additionally, broccoli is abundant in magnesium, a mineral essential for more than 300 enzymatic reactions in the body, and it plays a crucial role in soothing the nervous system,” she explained.

Main: Citrus mackerel salad

This main dish provides 630 calories, 29 grams of protein, and 16 grams of fibre. According to Dominique, it is excellent for brain, heart, and gut health. The dish offers a delightful combination of the rich flavour of mackerel and the refreshing zest of citrus. Mackerel is notably one of the few natural sources of vitamin D, which plays a crucial role in immune system regulation, as she points out. Dominique suggests cooking the fish in a small amount of extra virgin olive oil, which is rich in heart-healthy monounsaturated fats and a variety of polyphenols.

Dessert: Tofu chocolate mousse with blueberries

250 calories, 7g protein, 5g fibre

Desserts frequently contain high levels of sugar and unnecessary calories; however, it is feasible to create a sweet indulgence that is both nutritious and enjoyable. As noted by Dominique, silken tofu and tahini are excellent sources of calcium, which aids in maintaining bone density and facilitating normal muscle contractions. Additionally, silken tofu provides protein and magnesium. Cacao contributes iron, magnesium, and zinc, all of which are essential for sustaining healthy energy levels, muscle performance, and proper nervous system function.
