What is polytetrafluoroethylene?
In the video, Dr. Jayesh Sharma explained in Hindi that non-stick pans contain a substance known as polytetrafluoroethylene (PTFE). The term may evoke thoughts of a hazardous chemical, raising concerns about its safety for human health. However, PTFE is actually utilized extensively within the human body. For instance, stents used in post-surgical heart procedures are made from PTFE, and the most effective mesh for hernia repairs also incorporates this material. The reason for its widespread use is that PTFE is inert and does not react with other substances, which is what gives it its non-stick properties. Consequently, this allows for cooking with reduced amounts of oil and ghee on non-stick cookware without food adhering to the surface. So, what is the concern?
3 problems with PTFE used in non-stick
He stated, "There are three concerns commonly associated with non-stick pans, with the third being the most significant. The first issue is that during cooking, certain components of the utensils may inadvertently mix with our food. PTFE, a type of plastic, can enter our bodies, and none of us desire that. However, if you were to ask my opinion, I would argue that among plastics, PTFE is relatively safer since it does not interact with our bodies and is expelled along with food waste."
He continued, "The second concern is that some individuals believe non-stick pans emit a gas harmful to birds. In reality, when heated beyond 300 degrees Celsius, they can release chemicals that may lead to respiratory issues in humans and are particularly toxic to birds. However, reaching such high temperatures in a household setting is quite challenging. The third and most serious concern raised is: if PTFE is non-stick, why does it adhere to the pan? The answer lies in the fact that certain chemicals are employed to ensure it bonds to the pan. As long as it remains attached to the pan, these chemicals will not contaminate your food."

To ensure the safe utilization of non-stick cookware, adhere to the recommendations provided by Dr. Jayesh Sharma. He emphasizes that the use of metal utensils can damage the non-stick surface, potentially resulting in the release of harmful chemicals. Dr. Sharma stated, “The issue occurs when we persist in using non-stick pans that have become unsafe due to extended use. It is advisable to use silicone spatulas for cooking with non-stick pans, as they are safe. Additionally, you should dispose of any non-stick cookware that shows signs of damage, even if it is minor.”
