Vegetables Tehri is a very popular rice dish among vegetarians in Uttar Pradesh. It’s a one-pot recipe made with rice and winter veggies like potatoes, green peas and cauliflower. It is not just quick and easy to make, but also absolutely delicious. This is a yummy lunch box recipe too. Try this flavorful rice dish at your home.
Ingredients
1. Mustard oil
2. Desi ghee,
3. Cumin seeds
4. Bay leaf
5. Asafoetida (Hing)
6. Dry spice
7. Black pepper
8. Chopped onion
9. Finely chopped ginger
10. Chopped vegetables (take any veggies of your choice)
11. Green chilli
12. Garlic paste
13. Turmeric powder,
14. Garam masala,
15. Red chilli powder
16. Cumin powder
17. Salt as per taste
18. Curd
19. Chopped tomatoes
20. Fresh green peas
21. Biryani masala
22. Soaked basmati rice
23. Fresh coriander leaves
Method
1. Heat a pressure cooker or a clay pot with 2 tsp mustard oil and ghee. Add cumin seeds, bay leaf, asafoetida, some dry spices, and black pepper. Roast everything very well.
2. When the spices begin to sizzle, add chopped onion. Fry the onion until it turns golden.
3. Add finely chopped ginger and add chopped vegetables to it. You can take any veggies of your choice. Fry them on a medium flame for 2-3 mins.
4. While the vegetables are roasting, let's prepare a masala. Take ginger, green chilli and garlic paste in a bowl and add turmeric powder, garam masala, red chilli powder, cumin powder, and salt as per taste. Add 1 tsp of curd and mix all together. You will get a very nice paste of the spices and keep it aside.
5. Make sure that the vegetables are cooked and add chopped tomatoes to it. Then add prepared masala paste to it. Mix everything very well.
6. Cook the masala until the oil separates. Add a little biryani masala to it
7. Add the soaked rice. Stir and mix very well.
8. Next, add fresh green peas and pour 2.5 to 3 cups water.
9. Season with salt according to taste. Stir to combine. Check the taste of the water.
10. Cover the pan with a tight-fitting lid, so that the steam does not pass from the sides.
11. On low heat (sim), cook the Tahri till all the water is absorbed and the rice grains are fluffy and soft.
12. You can also garnish it with some Fresh coriander leaves while serving.
This delicious Tehri does not require any side dish served with this rice recipe. But tastes amazing when served with a choice of raita.
